Want an easy and delicious White Chili crock pot recipe? This is one that my friend, Galina, adapted and it is soo good!
Ingredients:
White Chicken {choose from 3 boiled Boneless Skinless Breasts or shredded Rotisserie Chicken or 3 lg. cans of White Chicken}
2 (14 oz) cans of Chicken Broth
2 cans Great Northern beans
2 cans Navy beans
2 cans Corn
2 (4.5 oz) cans Green Chiles
2 medium White Onions (diced)
½ c. Green Onion (chopped)
1 medium Red Pepper (diced)
1 medium Yellow Pepper (diced)
2 T of Cilantro (finely chopped)
4 cloves of Minced Garlic
1 T Cumin
1 T Salt
2 tsp Pepper
2 T Olive Oil
Toppings (optional):
Sour Cream
Shredded Cheese
Sauté white onions, garlic & peppers in olive oil until tender. Add chicken, sautéed vegetables and remaining ingredients to crock pot. Cook on high 3-4 hours or low for 6-8 hours.
Top with sour cream and shredded cheese if desired.
